- 1 bag fresh cranberries
- 1 cup white sugar
- 1 cup orange juice (with pulp)
- The peel of one orange, remove pith and julienne
- ½ cup coarsely chopped, lightly toasted walnuts.
- 1 cinnamon stick
Bring the orange juice to a light boil. Add sugar until dissolved. Add cranberries, Reduce heat and simmer for 15 minutes. Remove from the heat. Add orange peel, walnuts and cinnamon stick. Allow to cool. I make mine in the evening and cool overnight and refrigerate the following morning. You want the heat to allow the peel and walnuts and cinnamon stick to slightly soften. Save a few orange peels and walnuts to garnish for serving.
